The best smoked shoulder I ever had was done by a West Tennessee boy in the Fort. It was perfection. The second best was ironically from a Jewish guy originally from Chicago.

There will be a steel door on the front of the firebox/fireplace. I will open and shut it to keep the heat in and increase the heat draft through the smoking stack. I will also be able to adjust the heat depending on how close I build the fire to the opening from the firebox to the smoker. The top of the smoker will be capped off with concrete, with a 6 inch vent pipe.
