OWH Memorial Undead Topic

It's one of the courses in an Australian wine dinner we're doing tonight. I'll report back.

 

I'm with VD, they are basically Australia's squirrel. Which means, yea... I'd eat them.

They are probably a lot less greasy than squirrel, too.

 

I'm confident they are delicious. Just on looks.

 

Yes, but it was a long time ago.

 

So the kangaroo was pretty good. It was leg meat which makes sense as they make up a big part of the animal. In terms of texture and flavor it reminded me of slightly gamey pork tenderloin. Talked to chef after about how he prepared it and he said it was his first time working with it and was very nervous about getting it tender. He rubbed it in espresso and cocoa then wrapped it in prosciutto. Smoked it for 15 minutes then let it sit overnight so salt from prosciutto could tenderize it. They then roasted it in a 500 degree oven for 10 minutes and gave it a few minutes to rest before serving. It worked as it was definitely tender. Said next time he would add salt to the rub to further help tenderize.

Pretty sure you can actually walk into the kangaroo exhibit at the Nashville Zoo. Groves could just walk in and grab one of the bastards.

Good call, they have claws on the hind legs and can seriously cut or even disembowel a person

 

This is not a disemboweling, but it does feature a punch and a kangaroo and is exhibit A as to why I love Australian people

 

haha, the shocked look on that kangaroo's face is priceless.

 

Pretty sure the "chef" who prepared it the one time I had it did not go to this much effort. I can sum up my experience by saying it was leathery with an intense grain and lacking in flavor other than salt and something slightly nausea inducing. It paired poorly with the bargain German beer the place served.
