I’ve got a recipe for making buckeyes (like the ones Cracker Barrel sells for a fortune) that are the best of any I’ve tried. Folks in the family know when the holidays roll around they better get their request in early! Once I learned how to keep the chocolate from seizing the rest is easy. 1/3 cup butter 2 cups powdered sugar 1 cup peanut butter (be sure to use the cheap store brand stuff... it really does work way better) Let the butter get room temp, mix it with the PB and gradually (this is really important) mix in the powdered sugar. If you dump all the sugar in at once it probably will end up too crumbly. Roll the balls up and put ‘em on a tray lined with wax paper. Put the tray in the freezer for 30 min-1 hour. While the balls are in the freezer (sounds funny, I know...) get a double boiler and melt the chocolate (about 1/2 pound or so) on lowest heat setting available. If you try to melt the chocolate on too high heat it’ll seize up. Dip the balls in the melted chocolate (tee hee) with a toothpick but not all the way... you want a little of the PB to show. Put ‘em on the wax paper and when you’re done, set the tray in the fridge for a little while to set everything up.
