    Im going to brine my Ribs for the first time. Ill soak them a mixture of salt, cold water, and seasonings for 48 hours in the fridge. Much of the moisture is lost during the smoking phase. Brining will offset the original moisture lost with the absorption of the water. I will not foil my ribs trying this method.

    Bringing this one back from the dead.

    Tried Full Service again today. Still don't like it. Meat has no flavor on it's own.

    On a complete side note, my opinion of Archer's has changed 180 degrees since the first post in this thread. That original visit must have been on a bad day.

    Nachos at Full Service are good. They had an awesome BBQ quesadilla that was their special for just a month. I tell them every time I'm there it needs to be a regular menu item. They could also use some better sides.

    I like Archer's, although something about the place made me think it wouldn't be that good going in. Something just seems kind of generic and unappetizing about it.

    Full Service is well on down my list.

    Archers, Sweet P's, M&M Catering, at least those 3 above Full Service. I just wasn't impressed

    I get the generic piece to Archer's, even if I think it's really good.

    I just judge a BBQ place by the simplest of items - a simpled pulled pork sandwich. Don't try to do all this fancy stuff until you have mastered that. I will say I had their brisket at a event one time and thought it was pretty good, but if I am doing BBQ, I want pig, not cow.

    Glad this got a bump.

    Was in Texas today and had Cousins BBQ.

    It good.
