I've got a Weber gas grill. Big fan of their stuff.

Seems an appropriate place to ask this:

What are some of your recommended marinades for beef, chicken and pork? I normally try to use a trifecta of an oil, citrus juice, vinegar and spices. Curious to hear what everyone else does.

This will work on anything but I like w/ flank steak.

    1/2 c soy sauce
    3 tbsp crushed garlic
    2 tbsp Worcesteshire
    1 tsp garlic powder
    1/2 tsp onion powder

I don't marinade much. I prefer rubs and seasonings, but that one above is money.

Yes. It worked great the first time but the last two, while really good, weren't the same consistency/tenderness. I would say it's a temperature issue. I've been smoking other things with hem each time so I'd say temp distribution is different.

It's amazing how simple 321 is while giving very good results in fairly short time.

I like everything on that list. Definitely going to try it.

I like to let it soak overnight.

Mojo works well with pork and chicken. I'll marinate pork in apricot juice and apple cider vinegar with a little brown sugar.

For grilling chicken, an overnight marinade in Italian dressing is very effective.

I like marinating chicken is lime or lemon juice and rice wine vinegar.

For carne asada I use cumin, ancho chile powder, paprika, a lot of key lime juice, honey, and beer.

I think it does produce better ribs on average. You certainly are less likely to obliterate them or dry them out. But if you have a low enough temp or cut down on the sugar of the rub, it's not required. It is a decent amount of effort.

I mix the Italian dressing with buttermilk.

Good marinade. Used it on a flank steak and it was great. I added some red pepper flakes to give it some heat. Thanks Dooz.
