I dated a girl from New Iberia. her family was as Cajun as it gets, and spent some time down in NO in Baton Roege and I either didn't go back woods enough or the people I hung with refused to put something that looks that nasty in front of me.

I have family in Eunice, LA, and that’s pretty close to what their gumbo looks like, color-wise. It’s a little darker than I’m used to seeing, likely because they allowed the roux to get too hot. I’m used to gumbo looks more beige / creamier brown, than this. The big difference I see, again this is only from what little experience I have and gumbo’s I’ve seen, is how sparse this gumbo is, as I’m used to seeing chicken / taso / okra / parsley, etc.

anybody who said anything about the presentation of Jimmy's gumbo has my identical take, because that is country food in a nutshell, or at least what I think of. I do appreciate that you asked please, though.
