    I love a baked sweet potato. I don’t care as much for all the dishes with marshmallows and whatnot on them

    Sunday lunch was at a meat and three place in St Joseph, Tennessee. They had an all you can eat special on ham, dressing, fried chicken, etc. I passed on the ham (looked a little dry), but I had waaaay too much dressing. I love it and could eat it at least a couple dozen times a year and never tire of it. They also had sweet potato casserole topped with crunchy toasted, sweet pecans and banana pudding served as God and grandma intended - hot and from scratch. I think I gained another pound just typing this.

    Agreed, it's Easter food.

    Now, we do have a nice oyster casserole for Thanksgiving that's awesome... I just have no [uck fay]ing clue how it became a staple in the family.

    My old man has an oyster dressing recipe and it’s [uck fay]ing delicious. Odd, but delicious.

    Had a bday party for co-worked at work yesterday. Two homemade chocolate pies and one coconut pie. Have half a pie of each remaining in fridge for dessert today after lunch.

    Bought my turkey last Monday, had it in the fridge since then. Took it out to get ready for the rub, damn thing is still frozen solid.

    Yeah, I am following the thawing instructions, and I'm not a believer in it being thawed by the wee hours of Thursday.

    Put it in a five gallon bucket in the tub. Fill it with cold water and then put it under the faucet with it turned on the cold water so it is a slight trickle into the bucket. It will thaw quickly without getting too warm. Keep an eye on it

    How long does it take to thaw one like that ?

    Not very long. Don't be tempted to use hot water, though. That is bad. The convection of the cold water around the bird thaws it in a few hours.
