Dunno. I'd expect stingray wings would taste too smoky, on account of the high urea in their bodies due to their physiology. Maybe there is a way to deal with that when prepping them though. That's why shark meat is a little smoky/pee-scented.
I think the majority of scallops you'll find out there are actually sting rays that have been cookie-cuttered into round shapes.
It is believed by some that much of the calimari rings found in this country are pigs' anuses. There are some internet "experts" that have apparently debunked this rumor, but if i were substituting pig rectums for squid, those are exactly the kind of experts I would make sure were on the internet. Just sayin'.
Only way to be sure is to feed them to a person with a shellfish allergy and tell them they are just string ray cookies.
