I was about to try to answer, but realized if I’m being honest I don’t know what gamey really means to most people. Is it more of a taste thing or a smell thing too?

 

Not as exciting but I threw a 5 pound bologna on the smoker for small group today.

Lone 2025 resolution was to smoke something once a month. This summer will be trying to go brisket.

 

Keep going. Soon you’ll be back to smoking sausage once a day.

It's more of a taste thing to me, but since they're intrinsically linked I'm sure it's a bit of both.

I'm okay with some gamey flavor, but strong is not as enjoyable to me. I love smoke, though.

Gotcha. I haven’t smoked a deer the way Groves did before so I’ll let him comment on that method. The only time I’ve smoked deer shoulder it turned out great, but the texture probably would be a turnoff to people that don’t eat much wild game. But from his picture I can tell I should have pulled instead of attempting brisket type cuts.

 

I don't like gamey at all. I cannot even eat lamb because of it.

 

I think I know what you mean on lamb, honestly I could go the rest of my life without eating another lamb steak. But I’ve smoked racks of lamb that’ll knock your socks off, if you’ve never done that it’s worth a shot.

 

Bison is considered gamey but I have trouble enjoying many regular burgers now.

 

He is said to suffer from Bipolar disease. There is medicine that works miracles. I bet that he is not on any.

 

I had haggis in Scotland and found it okay. It's not like it was delicious, but it wasn't awful.

 

I think I read something on the bipolar thing. Either some doc said he was and he was on meds and then another (newer) doc said he wasn't so he is off. He is flying the "But, I'm on the spectrum" flag that is so popular now. You know it is all the rage with the billionaires, now.

 

Lamb is ok for me. Old sheep, mutton, on the other hand is a little too strong for my taste. I'm ok with any game meat, as long as it is cooked/smoked properly.

Beef liver is the one thing, I don't like, even when one of my granddads would say, "But, if it is cooked right, you'll like it." No, I don't.

I wonder what soylent green will taste like?

 

Nah, to go margaritas and getting to sit in your car and wait at doctor's offices was the best thing about Covid.
